Domaine le Sang des Cailloux
Vacqueyras features rolling hillside vineyards dominated by clay and gravel. Plumper more forward than Gigondas. The domain’s holdings are comprised of just over 17ha in the Vacqueyras appellation, the varieties mimicking the blend in proportion of crops. For the rouge, almost 11 of the 16ha are planted to Grenache, followed by much smaller plots of Syrah, Mourvèdre and Cinsault.
For the blanc, equal-sized plots are planted to Grenache Blanc, Clairette, Bourboulenc, Rousanne and Viognier. The domain practices organic farming techniques, leaning toward the biodynamic. Berries are completely de-stemmed for maceration/fermentation which lasts from 14-20days in stainless steel tanks. The “classique” spends 6-8 months in foudre, whereas the Cuvée Lopy will spend as much as 18 months in 450 litre tonneaux. Both are bottled with out fining or filtration. The name “Lopy” refers to the farm where Serge was raised. Each year the cuvée classique is named after one of Serge’s three daughters: Floureto, Doucinello or Azalïs.
