ABOUT DOMAINE LUCIEN BOILLOT
Lucien Boillot founded this Burgundian domaine in 1978 after he and his brother divided the family’s vineyards. The domaine is unique in that Lucien moved north to the Côte de Nuits to begin purchasing vineyards there, while maintaining his parcels in the Côte de Beaune.

Since brothers Pierre and Louis took over management from their father in the early 1980’s, we’ve seen each vintage at this great property improve. Pierre looks after the vines, and Louis looks after the administration, but a visit to their cellars makes it very clear that both brothers share a zeal for winemaking they could have only inherited from the family patriarch. A visit here is a stroll through the Côte d’Or, a taste here of Pommard, followed by Volnay, Nuits-St. Georges followed by Gevrey. At Domaine Boillot one begins to understand the subtle distinction between Beaune and, say, Fixin. Their range of Premier Cru sites is second to none.

Vinification: The grapes are destemmed and then left to cold macerate for three to five days before fermentation begins. Fermentation lasts for three weeks, with 2 punchdowns per day. The wines are aged in oak barrels, using 20% new oak.
