Berries are completely de-stemmed before crushing.
Fermentation takes place in temperature controlled, stainless steel tanks without the addition of yeast or chaptalization.
The wines are allowed to go through their malo-lactic fermentation in barrel.
The Bandol red spends two years in barrel in order to naturally stabilize and clarify itself, eliminating any need for physical or chemical interference.
Terre d'Ombre," a declassified Bandol made from the estate's younger vines, sees slightly less barrel aging.
The whites and rosés spend six to eight months in barrel and are bottled with out fining or filtration.
